Yeast and process
Testing yeast profile, temperature, and flavour development.
Nanobrewery / Copenhagen harbour
Small batches, local tastings, and beer brewed close to the harbour.
Proviant Brewing is a small brewery taking shape in Sydhavn. We are building it from the ground up inside a shipping container — with test brews, practical build work, and steady adjustments along the way.
The container gives the project its frame. Space is limited, so equipment, process, and recipes have to be carefully prioritised. The result is a small, flexible brewery where we can test, adjust, and develop beer in small batches.
The first beers are brewed as test brews. We work with ingredients, fermentation, recipe, and feedback in short cycles, so we can adjust flavour and process along the way.

A clean, dry base beer built for repeatability and adjustment.
A small batch with a warm malt profile and fresh hop notes.
Here we share short updates from the container build, the first test brews, equipment, permits, and tastings in the local area.

Tasting note
We want to build a small brewery with local roots. When the first batches are ready, we will invite people to small tastings and collaborate with people in and around Sydhavn.
